◻︎Chicken legs 4x
◻︎Potatoes 4x
◻︎3x small chili peppers
◻︎1 Red pepper
◻︎Onion 2x
◻︎Garlic powder 1 tbsp.
◻︎Dried ginger 3 pieces
◻︎Star anise 1x
◻︎Orange 1x
◻︎Bay leaves 2x
◻︎Lime leaves 2x
◻︎Turmeric powder 2x 1 tsp.
◻︎Sea salt 2x1 tsp.
◻︎Black Pepper ½ tsp.
◻︎Honey 1 tbsp.
◻︎Cane sugar 1 tbsp.
◻︎Galangal powder 1 tsp.
◻︎Lemongrass powder 1 tsp.
◻︎Tomatoes 4x
◻︎Black Galangal powder 1 tsp.
◻︎Dried coconut 1 mug
◻︎Coconut milk 200 ml.
◻︎Water 2x 2 tbsp. + 1 mug
◻︎Sunflower oil 2x2 tbsp.
◻︎Lemon juice 1 tbsp.
◻︎Stock cube 1x

MISE en PLACE

1. Place the Chicken on a plate.
2. Peel, wash and dry the potatoes.
3. Chop the potatoes into cubes.
4. Chop Tomatoes in half.
5. Place everything clearly on the counter.

PREPARATION
◻︎Bring 2 tbsp. Sunflower oil in the wok over medium heat, at temperature.
◻︎Add the potato cubes into the wok. Stir to mix. Add 1 tsp. Sea salt.
◻︎20 minutes of cooking. Stir occasionally. The potato cubes will get a brown crust.
◻︎Remove them from the wok.
◻︎Add: 1 tsp. Lemongrass, 1 tsp. Turmeric, 3 whole chili peppers, 1x star anise, 8x½ tomatoes.
◻︎Squeeze the orange and add the juice to the ingredients. Stir to mix.
◻︎Add: 1 tsp. Galangal, 1 tsp. black Galangal, 3 dried Ginger. Stir to mix.
◻︎Add: 1 Red Pepper chopped, 2 tbsp. Water. Stir to mix.
◻︎Simmer for 15 minutes. Stir occasionally.
◻︎Add ½ tsp. Black pepper. Stir to mix.
◻︎Add 1 tbsp. Garlic powder. Stir to mix.
◻︎Add the Chicken into the Wok.
◻︎Add some Sea Salt over the Chicken.
◻︎Add Lemon Juice over the Chicken.
◻︎Add 1 tbsp. Cane sugar over the chicken. Simmer for 20 minutes.
◻︎Turn chicken. Simmer for 20 minutes.
◻︎Add 2 tbsp. Sunflower oil. Turn chicken over. Add 2 tbsp. Water. Simmer for 15 minutes.
TURN HEAT LOW. Take out Chicken.
◻︎Add 1 mug of dry coconut, 1 tbsp. Honey, the Onions. Stir to mix.
◻︎Add 2x Bay leaf, 2x Lime leaf, 200 ml. Coconut milk. Stir to mix.
◻︎Add 1 tsp. Turmeric powder. Stir to mix.
◻︎Add Stock cube, 1 mug of Water. Stir to mix.
◻︎Add Chicken into the Bumbu. Simmer for 15 minutes.
◻︎Sauce thickened. Add diced potatoes. Simmer for 10 minutes.
TURN HEAT OFF. The lovely AYAM KETANG is ready. SELAMAT MAKAN!
