Beauty Amy loves her aunts' Satay, hence her name.
She doesn't like meat but she won't say NO to this Satay.
Amy is such a nice girl: sporty, smart, tough, creative and a doer in her own way. It's too cold outside to BBQ, so these power Satays go into the oven.

INGREDIËNTS ( 15 Satays)

THE MEAT

◻︎750 grams pork (lean)
◻︎Onion 1x
◻︎Brown Sugar 2 tsp. + 3 tsp.
◻︎Galangal 1 tsp. (powder)
◻︎Black Galangal 1 tsp. (powder) ◻︎Garlic 4 cloves
◻︎Lemon juice 2x 1 tsp.
◻︎Surinamese Curry 1 tsp. (powder)
◻︎Ginger 1 tsp.+ 1 tbsp. (powder) ◻︎Turmeric 2x 1 tsp. (powder)
◻︎Sea salt 1 tsp.
◻︎Black pepper 2x ½ tsp.
◻︎Peanut butter 2 tbsp.
◻︎Sunflower oil 2x 2 tbsp. + 1x bowl 
◻︎Milk 1 cup
◻︎Water 2x ½ cup

TOOLS

◻︎Satay stick (length: long)
◻︎Small pan
◻︎Peeling knife
◻︎Cutting knife
◻︎Cutting board
◻︎Teaspoon
◻︎Tablespoon
◻︎Stirring spoon
◻︎Fork
◻︎Aluminum foil
◻︎Bowl (large)
◻︎Bowl (small)
◻︎Cloth or Brush
◻︎Scale (flat)

1. Cut it into slices, then into strips and then into small equal cubes.
2. Place the meat in a large bowl.
3. Finely chop the onions. Coarsely chop garlic.
4. Add spread over the meat: ◻︎2 tbsp. Brown sugar ◻︎Galangal 1 tsp.
◻︎Black Galangal 1 tsp. ◻︎Lemon juice 1 tsp. ◻︎Surinamese Curry 1 tsp.
◻︎Ginger 1 tsp. ◻︎Turmeric 1 tsp. ◻︎Sea salt 1 tsp. ◻︎Black pepper ½ tsp.
◻︎Onions ◻︎Garlic
5. Break the Chillies into pieces and spread them over the other dry herbs.
6. Add spread Sunflower oil 2 tbsp.
7. Stir everything together well.
8. Cover the marinated meat with aluminum foil.
9. Poke holes through the aluminum foil.
10. Place the meat in the refrigerator for at least 4 hours for a juicy result.

PREPARATION
◻︎Put the Satay sticks in a bottle with water. Leave them for at least 30 minutes in the bottle.
◻︎Remove the marinated meat from the refrigerator at least 1 hour before use.
◻︎Remove the aluminum foil from the bowl.
◻︎Remove the Satay sticks from the bottle with water. Set aside.
◻︎Set a big plate ready aside.
◻︎Fill a small Bowl with Sunflower Oil. Set aside.
◻︎Wrap Aluminum foil around the Scale and place the Scale ready for use.

Preheat OVEN to 180*.
◻︎Thread 5 cubes of meat per satay stick.
◻︎Put the sticks on the large board. SAVE THE MARINADE!!!
◻︎Remove the rack from the oven and cover it with aluminum foil.
◻︎Place the satays on the rack.
◻︎Dab the Satays with Sunflower Oil on both sides, with a cloth or brush.
◻︎Put the rack with satays in the oven for ≈15-20 minutes.
◻︎Turn it over once in between. Place the flat dish Aluminum foil in the oven.

IN BETWEEN THE PEANUT SAUCE
◻︎Add Sunflower oil 2 tbsp. in a small saucepan over medium heat, to temperature.
◻︎Add the Marinade to the pan. Stir to mix.
◻︎Let this simmer for 10 minutes. Stir occasionally.
◻︎Add Ginger 1 tbsp. Stir to mix.
◻︎Add Lemon juice 1 tsp. Stir to mix. Let sauce simmer.
◻︎Add 1 Cup of Milk. Stir to mix. Let sauce simmer.
◻︎Add Peanut Butter 2 tbsp. and ◻︎½ cup Water. Stir until peanut butter 'melted'.
◻︎Add Black Pepper ½ tsp. Stir to mix.
◻︎Add Turmeric 1 tsp. Stir to mix. Let sauce simmer. Stir occasionally.
◻︎TURN HEAT LOW. ◻︎Add Brown Sugar 3 tbsp. Stir to mix.
◻︎Add ½ cup of Water. Stir to mix. Let sauce simmer. Stir occasionally.
◻︎Sauce the right thickness. TURN OFF THE HEAT.

SATAY AMY
◻︎TURN OFF THE OVEN. Remove the rack satays and the flat Scale from the oven.
◻︎Put satays on the plate.
The peanut sauce and SATAY AMY are ready. SELAMAT MAKAN!
