'RITJA RITJA DAGING' 

The spicy RITJA RITJA DAGING is a tongue-tingling delight. It is SO insanely delicious. It tastes like more. This dish is absolutely worth repeating!
JENs recipes have a spicy bite. If you like less spicy, omit the red peppers in this dish
or remove the seeds.

RITJA RITJA DAGING                                        Mise en Place

INGREDIENTS

◻︎Jasmine rice 300 grams
◻︎Beef 1 kg
◻︎Onion 1x
◻︎Spring onion 2x
◻︎Red Chilli 4x
◻︎Parsley 3x
◻︎(Coconut) Cream 165 ml.
*You don't like Coconut, use cream.
◻︎Olive oil 2 tbsp. 
◻︎Sea salt 2x 2 tsp.
◻︎Lime Leaf 3x
◻︎Bay Leaf 2x
◻︎Brown Sugar 1 tbsp.
◻︎Lemon grass 1 tsp.
◻︎Lemon juice 1 tbsp.
◻︎Water 2x 100ml.
BUMBU

◻︎Coriander 1 tsp.
◻︎Turmeric 1 tsp.
◻︎Hazelnut 4x
◻︎Garlic 4 tnt.
◻︎Cumin 1 tl.
◻︎Ginger 1 tbsp.
◻︎Fish Sauce 1 tbsp.
WOK VEGETABLES
◻︎Water 50 ml
◻︎Carrots 10x
◻︎Lemon juice ½ tbsp.
◻︎Red bell pepper (large) 1x
◻︎Olive oil 2 tbsp.
◻︎Garlic 1 clove
◻︎Lemon grass 1 tbsp.
◻︎Chicken Stock Cube 1/4
◻︎Nutmeg 1 tbsp.
◻︎Brown Sugar 2 tbsp.

TOOLS

◻︎Wok
◻︎Big bowl(rice)
◻︎Rice cooker
◻︎Cutting knife
◻︎Cutting board
◻︎Table spoon
◻︎Tea spoon
◻︎Ladl
◻︎Bowl (meat)
◻︎Mortar or mixer (spices)

1. Dice meat in cubes. Add sea salt (2 tsp.) and mix in.
2. Place meat in a bowl.
3. Prepare Bumbu with: ◻︎Coriander◻︎ Turmeric ◻︎ Garlic◻︎ Cumin ◻︎ Hazelnut
◻︎ Ginger◻︎ Fish Sauce. Blend these together.
WOK VEGATABLES
1. Cut in cubes: ◻︎ Carrots ◻︎ Red bell pepper
2. Chop finely: Spring onion, Onion and Garlic.
3. Remove membranes from Chile pepper. Finely chop.
RICE:
1. Wash the rice clean.
2. The washed rice in the pan under a fingertip of water.
If you don't have an electric rice pan, follow the instructions on the package.
The rice is now ready for later.
3. Place all Mise en Place orderly on the counter for preparation.

PREPERATION
1. Add water to the wok. Over medium-high heat boil water to temperature. 
2. Add meat. Let this cook for 30 minutes.
3. Remove the foam in between.
4. Transfer meat and liquid from wok to a bowl.
5. Clean the wok. Put pan on medium-high heat.
6. Add olive oil. Over medium-high heat bring oil to temperature. 
7. Add bumbu/spice mixture.
8. Add the red chilies. Stir fry gently for 10 minutes.
9. Add lemon grass. Stir gently. Reduce heat to low.
10. Add Bay Leaf. Add Lime Leaf. Stir gently. Simmer for 10 Minutes.
11. Add tepid Water. Let simmer. Stir occasionally.
12. Add Onions.
13. Add Meat. Stirring occasionally. Simmer for 30 Minutes.
14. Add tepid Water. Simmer for 15 Minutes. Stir to mix.
15. Add Sea Salt 2 tsp.
16. Add lemon juice. Simmer for 15 Minutes. Stir gently.
17. Moisture will evaporate.
18. Add spring onion.
19. Add brown Sugar. Stir to mix.
20. Add Parsley.
21. Add (coconut) cream. Simmer for 30 Minutes. Stir occasionally.
22. Bring mixture to a soft boil.

IN BETWEEN (Last phase Ritja Ritja)

THE RICE (25 minutes)
If you don't have an electric rice pan, follow the instructions on the package.
◻︎Cook the rice first so it can dry properly.
◻︎Deksel op de pan, knop aan en de rest gaat vanzelf.
WOK VEGATABLES (15 minutes)
1. Oil into wok. Over medium-high heat bring oil to temperature. 
2. Add onion.
3. Add nutmeg. Stir gently.
4. Add garlic. Stir gently. Sauté onions until glazy.
5. Add carrots. Add 50 ml water. Stir to mix.
6. Add lemon juice. Stir to mix.
7. Add red bell pepper.
8. Add bouillon cube. Stir to mix. Simmer on low heat.
9. Vegetables are ready.
THE RICE
◻︎Rice is ready. Using a rice spoon, spatula the rice loose from the side.
◻︎Put the lid back on the rice pan. Rice is ready.
The sauce has thickened. The meat dish ready.
