'CHICKEN BUMBU'

CHICKEN BUMBU

INGREDIENTS

*Amount of sambal to your own choice.

◻︎Chicken wings 500 gram
◻︎Lettuce oil a half cup
◻︎Onions 2x
◻︎Garlic 2 cloves  
◻︎Lemongrass (dry) 2 tsp.  
◻︎Laos (dry) 2 tsp. 
◻︎Bay Leaves 2 leaves
◻︎Kaffir Lime 2 leaves
◻︎Vissauce 1 tbsp. of Trassi half tsp.
◻︎Sambal (own or oelek) 2 tbsp.
◻︎Red Chillies 2x 
◻︎Brown Sugar 1 el.  
◻︎Sea salt
◻︎Black Pepper
◻︎Little Water

TOOLS

◻︎Wajang
◻︎Fork
◻︎Spoon
◻︎Peeler
◻︎Cutting Knife
◻︎Cutting board

MISE & PLACE

Prepare CHICKEN MARINADE an hour beforehand.
1. Add Seas salt at Chicken wings.
2. At some black Peper.
3. Add chopped Garlic.
4. Mix everything well wit a spoon.
5. Leave the Chicken (covered) on a cool place.

BUMBU
1. Chop the onions.
2. Wajang at low temperature and add Oil into the pan.
3. Oil warm, add the Onions. Fry them until glazy.
4. Add some Sea salt and some black Pepper.
5. Add Sambal and the red Chillies. The Chillies open itself.
6. Ad Visssauce or Trassi.
7. Add brown Sugar. Stir gently
8. Add Laos, Lemongrass, Bay Leaves en Kaffir limes. 
Simmer for 15 minutes so the herbs will come together. Stir now and then.

DISH
1. Add Chicken wings trough the bumbu. Turn them regular with a fork.
Add a little water at the bottom, so the chicken doesn't stick.
Simmer for 45 minuten, it gets crispy.
3. Turn regural the Chicken wings with a fork.
